Notes
NUGGETS OF KNOWLEDGEChocolate chips - We really like Endangered Species Oat Chocolate chips. We also like Nestle Plant Based Chocolate chips. They both melt really well and keep this a vegan mix!Dutch Cocoa - Dutch cocoa is a smooth and mellow cocoa - a must for this mix, don't skimp- splurge for the Dutch version!Vanilla Powder - This stuff is awesome! I love adding it, not only to this cocoa mix, but pancake and waffle mixes too! Anywhere you use liquid vanilla, this powder does an excellent job at subbing in for it.Milk - Oat milk made this an extremely rich and thick hot cocoa. I would recommend either decreasing the mix to 2 slightly rounded tablespoon OR adding a ½ cup more of oat milk if it's too thick for you. Otherwise, almond milk was delicious with this mix, as was 1% or 2 % - honestly, any milk you fancy will be delish! We found that heating it to about 165°-170° melted the chocolate chips nicely!Marshmallows - You can find vegan marshmallows at Trader Joe's, Hy-Vee, Walmart, and some whole food/natural food stores. Trader Joe's and Dandies are a favorite here!
